Quick Cook: Lamb chops with an herby green sauce make a stunning dish
This simple and elegant meal comes together quickly even on a busy weeknight. Lamb chops cook in a snap, needing just 5 to 6 minutes in the pan to achieve a beautiful sear and juicy interior. It’s best to use a heavy pan, such as cast iron, to help with browning.
While some people are put by the gaminess of lamb, a vibrant sauce such as this one helps balance the flavor. The sauce we’ve included here is a basic formula you can use as a starting point and make it your own. Experiment with different green herbs, and dial the spiciness and acidity level up or down to your taste. The herby green sauce yields about 1½ cups, but don’t fret if that’s too much. The leftover sauce is great drizzled on eggs, vegetables and grilled meats — and even pizza!
If you are sensitive to chiles, you can omit them altogether or start with a smaller amount, adding more if desired. If you happen to make the green sauce too spicy — perhaps this particular chile was extra hot or you added too much to star — temper the heat by stirring in a bit of yogurt. It will change the consistency and color a bit, but the sauce will still be delicious.

½ a serrano chile or 1 teaspoon red chile flakes, optional
2 cloves garlic
1 teaspoon ground coriander
